School of Hospitality professors, students host President’s Council for food and wine seminar


The Oct. 14 event showcased seminars offered through the university’s Beverage Management Program.

School of Hospitality and Tourism Management professors Chip Cassidy ’75 and Michael Moran ’86, MS ’03 partnered to co-present a wine and food seminar in the Southern Wine & Spirits Beverage Management Center on Oct. 14 at Biscayne Bay Campus (BBC).

More than 50 people attended the event, including members of the FIU President’s Council, their guests and members of the BBC Circle of Friends.

BBC Interim Vice Provost Steven Moll welcomed guests and FIU student Sui Li, a native of China and a senior in the school’s Marriott Tianjin China Program, shared her student experiences with the group.

Cassidy, the program’s director, paired two wines with each course prepared and served by Moran and the students of his Advanced Food Management class.

Moran’s menu was inspired by the flavors of autumn and included slow-smoked Maple Leaf Farms duck breast with vanilla oil and raspberry barbecue sauce, complemented by a pinot noir and a Toscana rossa, as well as a hickory-grilled beef tenderloin paired with a merlot and a rioja.
