SHTM serving up lunch, dinner for summer


Summer is here, and while some students will take a much-deserved break, a group of School of Hospitality and Tourism Management students will spend the next few months in the school’s bayview dining room and kitchen.

Yep, FIU’s hospitality professionals of tomorrow are at it again: They are prepping a delicious summer series of gourmet lunches and dinners that everyone in the community will be able to enjoy beginning Tuesday, May 31.

For $18 (or $45 for three dates), community members from in and outside the university will have the option of visiting Biscayne Bay Campus and feasting on the culinary creations of talented FIU students.

These Panthers will put to the test the skills they are learning and developing in advanced cooking class as they plan and execute three-course meals under the expert guidance of chef-instructor Michael Moran ’86, MS ’03 through August.

Each date serves as a hands-on working experience for the students, who take turns working the front of the house, on the floor and, of course, in the kitchen, overseeing every step of a successful service.

Be part of this learning experience as lunch is served Wednesday through Friday at 11:45 a.m. (dinner is 6:30 p.m. on Tuesdays only). Dates are as follows:

Tuesday dinner: May 31, June 14, June 28, July 12 and July 26

Wednesday lunch: June 8, June 22, July 6, July 20 and Aug. 3

Thursday lunch: June 2, June 16, June 30, July 14 and July 28

Friday lunch: June 10, June 24, July 8, July 22 and Aug. 5

Meals include an appetizer or salad, a choice of entrée, dessert, coffee and a glass of wine. Reservations are encouraged and may be made in advance by calling Roger Ledesma at 305-919-4526.
