Explore Tuscany with Chef Mike Moran


Chaplin School of Hospitality & Tourism Management (CSHTM) chef instructor Mike Moran is hosting a tour to Tuscany, Italy, during Spring Break, March 8-16, 2013. A member of SHTM’s faculty since 1991, Moran is well known in culinary circles for his efforts with the South Beach Wine and Food Festival, among other accomplishments.

Participants from last year’s tour take a break from one of the cooking classes to smile for the camera.

Participants will stay at a private wine estate in the Chianti vineyards and meet the locals who run them. The tour will feature excursions to Florence and Siena for walking tours, meals at local restaurants and trattorias, wine tours in Tuscany with visits to different cellars, cooking classes with chefs (including Chef Moran), and market and designer shopping. The tour includes private bus transportation, English-speaking tour guides, and daily breakfast and lunch or dinner with wine. (To check out photos from last year’s trip, click here.)

The complete package with round-trip air fare from Miami is $3,040 per person, double occupancy, based on a minimum of 20 participants. A deposit of $250 is due by Wednesday, Oct. 31. While designed with the FIU family in mind, the tour is open to anyone who would enjoy discovering Tuscany’s wine, food and culture.
