FIU Takes Beer Brewing to the Classroom

MIAMI, Fla. (July 16, 2001) - Florida International University is encouraging students to brew their own beer on campus. In class, that is.
FIU's School of Hospitality Management has teamed up with the Department of Biological Sciences to teach students the scientific process of brewing beer.

The course, Brewing Science, which is being offered this summer, is an overview of brewing that will acquaint students with the practical and theoretical aspects of fermentation technology.

"This is a great way to combine science with beverage sensory testing and evaluation," said Lee C. Dickson, associate dean of FIU's School of Hospitality Management. "The course will give students hands-on practical experience in the beverage management field."

"Students always ask me how science fits into everyday life," said FIU Biological Science Professor Christopher Brown. "With this course I have taken a part of our culture and incorporated into a science lesson that will benefit both biology and hospitality students."

A thorough explanation of the principles and processes of brewing science is provided through lectures and lab exercises. The lectures provide a technical introduction to ingredients, yeast biology and fermentation biochemistry, while the lab exercises give students the hands-on experience in management and control process.

The Brewing Science class meets on Monday and Wednesday afternoons and runs through August 15th. Reporters interested in attending may arrange a visit by calling 305-348-2234.
